About Domaines Ott
Taking over from his father in 1993, Bernhard Ott, an eccentric and inquisitive owner took the company to the present-day whilst maintaining the knowledge and history passed down to him through the family business. Located in Wagram in lower Austria, Ott proved that quality Gr ner Veltliner could be produced using newer biodynamic methods. Ott renewed the vinification process, replacing old wooden caskets with stainless steel as well as expanding the vineyards. Combining traditional and innovative methods, Bernhard Ott is able to extract the best from each to produce high quality wines. Working the soil with composting using cow manure allows the sugar ripeness of the grape to stay moderate enabling the grapes to be picked at full ripeness. He also decides to bottle his wines with stelvin caps (screw cap) to retain the freshness of his wine. With 40 hectares of vineyard, planting 90% Gr ner Veltliner and 10% Riesling, Bernhard Ott has spearheaded a movement across Austria of using new techniques in winemaking.
