Jean-Paul Droin Chablis is white wine on lees of the Chardonnay variety produced by Jean-Paul Benoit Droin in AOC Chablis (Burgundy). Jean-Paul Benoit Droin is a historic winery in Burgundy formed by father Jean-Paul and his son Beno t Droin. Hand in handwork the family vineyards handed down from generation to generation since the early seventeenth century. They currently own 26 hectares in the renowned Premier and Grand Cru areas. In 1999 they built a new winery on the outskirts of the town of Chablis where modern and traditional winemaking techniques are combined to mark the character of each terroir very well. Jean-Paul Droin Chablis comes from old vineyards planted in shallow soils of grey marl and limestone and at an altitude above the sea of between 130-320 meters. Conventional agriculture is practiced with respectful techniques that allow limiting yields and preserving diseases. Harvesting is manual and is done early to preserve the natural acidity of the grape. In the winery, the meticulously selected grapes for the production of Jean-Paul Droin Chablis first undergo pneumatic gravity pressing, and then the resulting must be fermented with native yeasts at controlled temperatures. After spending 8-10 months in stainless steel tanks, it is bottled with a light filtration. Jean-Paul Droin Chablis is a white wine from one of the most prestigious wineries in Burgundy.
