Domaine Jean Jacques Confuron winery

The family estates were expanded to 12 hectares when Jean-Jacques married Andr e No llat, who contributed the plots of Nuits-Saint-Georges 1er Cru Boudots and Vosne-Roman e 1er Cru Les Beaux Monts, as well as some vineyards in Clos de Vougeot Grand Cru and a pitch in Roman e Saint-Vivant Grand Cru. In Chambolle they have 0.35 ha divided between the 1st Cru Ch telots and the 1st Cru Feusselottes, which they vinify together, in addition to 1.15 ha in various plots with village classification. In Vosne-Roman e they have 0.3 ha of the 1st Cru Les Beaux Monts and in Nuits-Saint-Georges they have 0.3 ha of the 1st Cru Boudots, 0.44 ha in the 1st Cru Les Chaboeufs, and 1.23 ha of category village. The remainder is divided between several plots with which they produce regional wines of Bourgogne pinot noir, Bourgogne aligot , and Bourgogne passe-tout-grains. The bunches are completely de-stemmed and placed in cement tanks of 25 to 50 hl, with hardly any squeezing, for later cold maceration. Fermentation is carried out by controlling the temperature and retaining the CO2 to maintain the aromatic freshness of the grape. The wine is left to rest on its lees until it is transferred to oak barrels, new for Grand Cru and second or third use for the rest of the range, where it will be aged between 15 and 18 months, depending on the vintage. The wines are bottled applying minimal doses of sulphur, without clarifying or filtering to maintain the typicality of each terroir.
