About Olivier Guyot

Olivier Guyot is a respected wine producer based in the heart of Burgundy, France, with family roots in winemaking stretching back to the 16th century. His domaine is located in Marsannay-la-Côte, a village at the northern end of the Côte de Nuits, and encompasses approximately 15 hectares of vineyards spread across some of the most esteemed appellations in the region, including Marsannay, Gevrey-Chambertin, Chambolle-Musigny, and Morey-Saint-Denis. The estate is managed with a deep respect for tradition and a commitment to sustainable viticulture, reflecting Olivier’s philosophy of working in harmony with nature to express the unique character of each terroir.

Olivier Guyot’s approach to viticulture is rooted in organic practices, with the domaine certified organic since 2012. He believes that healthy soils and vines are essential for producing wines that truly reflect their origin. The vineyards are cultivated without the use of chemical fertilizers or pesticides, and cover crops are planted to encourage biodiversity and maintain soil health. All vineyard work, from pruning to harvest, is carried out by hand, ensuring meticulous attention to detail and the highest quality fruit.

The domaine’s holdings are predominantly planted with Pinot Noir, the classic red grape of Burgundy, though some parcels are dedicated to Chardonnay and Aligoté for white wines. Olivier is particularly noted for his old-vine parcels, some of which are over 60 years old, adding depth and complexity to his wines. The diversity of vineyard sites allows him to produce a range of wines that showcase the distinctive qualities of each appellation, from the freshness and approachability of Marsannay to the depth and structure of Gevrey-Chambertin and the elegance of Chambolle-Musigny.

In the cellar, Olivier Guyot employs a minimal intervention approach, seeking to preserve the purity of fruit and the expression of terroir. Grapes are sorted by hand before gentle destemming, and fermentation takes place with indigenous yeasts in open wooden vats. Extraction is carefully managed through gentle punching down and pumping over, tailored to the character of each vintage and parcel. The wines are aged in French oak barrels, with a moderate use of new oak to enhance complexity without overwhelming the natural flavors. Bottling is done without fining or filtration whenever possible, to maintain the wine’s integrity and texture.

The resulting wines are celebrated for their balance, finesse, and authenticity. Olivier Guyot’s reds display vibrant fruit, fine tannins, and a clear sense of place, while his whites are marked by freshness and minerality. Each cuvée reflects the unique microclimate and geology of its vineyard origin, offering both immediate pleasure and the potential for graceful aging. Through his hands-on approach and dedication to sustainable practices, Olivier Guyot continues to build on his family’s legacy, producing wines that are a true reflection of Burgundy’s rich heritage and diverse terroirs.
