About Domaine Aurelien Verdet
Aur lien VERDET, was one of the pioneers of organic viticulture. Aur liens own Domaine comprised 4.5 hectares of Hautes C tes de Nuits until 2009. He uses minimal sulphur which disappears during the vinification anyway and the sulphur level is 60 80 mg/l maximum mostly originating from the indigenous yeasts. Vinification can take up to 30 days but his extraction is very gentle: up to 10 days cold maceration then gentle pumping over of the juice to stimulate fermentation. After 15 days, the caps will be punched down more or less frequently depending on the vintage structure. The wines are aged in oak barrels from Burgundy, Tron ais and Vosges forests. The 1er Cru lies at the top of the slope north of Nuits St Georges and just before Vosne Roman e. La Richemone lying at same altitude as Boudots has a dark cherry nose and a meaty, dense palate with a long ripe cherry finish Vosne Roman e 1C. BeauxMonts for dark cherry and spice from this inimitably vosne vineyard. Morey St Denis for the characteristic nose of morello cherry and polished wood with a complete mouth-filling velvety texture on the palate. Gevrey Chambertin AC This plot lies just east of Mazis Chambertin and the wine has an intensely aromatic nose of peony and violet with a great weight and density. Chambolle Musigny for floral and enticing with archetypal Chambolle plumpness and breed. Hautes C tes Le Prieur : limestone & clay with occasional rock bands 30 cm below the surface which ensures low yield and high quality.
