About Domaine Chevillon Chezeaux
The domain was founded in 1887 and until the year 2000 it was the Chevillon family who produced wine. In 2000, Philippe Chezeaux married into the family and now the wines also bear his name. Great complexity combined with incredible finesse and elegance - a hallmark of the wines from Chevillon-Chezeaux. In the heart of Nuits-Saint-Georges, with several famous premier cru modes, the Chevillon family has been creating these wines for five generations. The family has just over 8 hectares of vineyards. Everything is done by hand and they work very traditionally in their winemaking with slow fermentation and storage in oak barrels for up to 24 months. The wines from Chevillon-Chezeaux give us a great taste experience in their finely tuned and nuanced way and are fun to explore with further storage. The wines sought after combine both finesse and elegance to be able to consume them when young, but also complexity and structure to allow them to keep for long years. The harvest is manual, crushed and 100% destemmed. The harvest in the vats is carried out without trituration to keep the grapes as intact as possible. A cold pre-fermentation (10-11 ) of 6-7 days is systematically carried out for better extraction and aromatic fixation. Entonnage by gravity in oak barrels. Aging in oak barrels for 12 to 16 months depending on the appellations with a maximum of 20% new barrels for Villages and 1er Crus to keep the expression of each terroir. The wines are then bottled if possible, without fining or filtration.
