About Maison Bertrand Ambroise
Taking over from his father-in-law in 1988, Bertrand Ambroise produces boutique wine in a traditional Burgundy way. Located in Nuits-Saint-Georges, Ambroise produces 30% Chardonnay 70% Pinot Noir, he uses alternative techniques to produce the traditional taste of Burgundy wine. The leaves are removed from around the bunches of the grapes to produce riper tannin and the Pinot Noir de-stemmed. During the fermentation process, the grapes are treated with dry ice to prevent them from fermenting at first, once the juice at the optimal temperature, the fermentation begins. As a small business, Ambroise is able to retain its traditional winemaking philosophy with one goal in mind, your pleasure .
