About Paitin
The Paitin winery is located in Neive, in the famous Barbaresco area. Today, the estate covers an area of 18 hectares, half of which fall under the Barbaresco appellation, in particular in the famous cru of Serraboella. It is one of the most highly rated areas ever, which, thanks to particularly suitable soils, has always produced elegant and complex wines. The territory is inextricably linked to Nebbiolo, the autochthonous red grape variety still today at the base of the great wines of Barolo and Barbaresco. The Paitin winery has jealously preserved the three classic clones of Nebbiolo: Lampia, Ros and Michet. The best plants of the estate were used to make a mass selection to improve quality while preserving the authentic character of tradition. The vines are managed by keeping the inter-row grassed and using the practice of green manuring for fertilization, sometimes integrated with organic fertilizer. Since 2000, only sulfur and copper are used, according to the principles of organic farming, a practice that led to organic certification in 2015. The absence of the use of chemical products has favored the development of luxuriant environmental biodiversity and rich fertility of the soils. The vinifications are carried out with great care and delicacy, to safeguard the quality of the grapes. The refinements traditionally take place, using large, non-toasted Slavonian oak barrels, so as not to cover the bouquet of Nebbiolo with the aromas of the wood. Bottling follows the timing of the moon phases and the wine rests in the bottle until it has reached full expressive maturity.
