About Castello della Sala
Castello Della Sala, a magnificent medieval manor located halfway between the Paglia river and the summit of Monte Nibbio. The estates of vineyards are located at an altitude of 220 - 470 meters above sea level and are planted with traditional varieties such as Procanico and Grechetto but also with Chardonnay, Sauvignon Blanc, S millon, Pinot Blanc, Viognier and a small quantity of Traminer and Riesling. The vines grow in clay and calcareous based soils, rich in fossil shells, and they are well exposed to the rising of the sun with an excellent difference of temperature between day and night. In 1979 Renzo Cotarella joined Castello Della Sala with this ambitious project: making a white wine able to age and improve over time. In 1985 vintage produced the first true Cervaro Della Sala: one of the first Italian wines that underwent malolactic fermentation and aging in barriques. Lastly, skin maceration times were tweaked and reduced from about eight hours in past vintages to four to six hours (at cooler temperatures) in this vintage. All of these changes work to reverse the textural heaviness and fruit maturity that, to many, feels out of date in today's wine market. The results are clear. This is a pristine and elegant interpretation with crisp notes of peach and tropical fruit followed by a sharp mineral definition. Those salty flavors come from the Grechetto. The wine ferments and stays in oak for five months. This is a classic vintage that has produced a profoundly vertical and focused wine.
