About Santa Cristina
The name of the wine and its label refer to the cypress, one of the most representative trees of this Italian region, thus appealing to the affection that the winery feels for this land. On the nose we find aromas that remind us of raspberry and flowers such as orange blossom and rose, on the palate, it is smooth and balanced. Frequent rainfall up until the first days of July was followed by sunny weather, without, however, temperature peaks, up until mid-August. The last half of the month was characterized by occasional rain which fell during mostly fine weather and by temperatures which rose once again, starting in September. Cipresseto is pale pink in colour. On the nose notes of orange blossoms and wild strawberries combine to form its fresh aromatic bouquet. Its palate is soft, full-bodied and well-balanced with a lengthy, fruity finish. To best conserve freshness and fragrance in the grapes, the picking of the Sangiovese, Cabernet, and Syrah crop began around August 20th and terminated in mid-September. Harvested grapes were brought to the cellar, destemmed and very gently pressed. They must be chilled to a temperature of 10 C (50 F) to favour natural settling and enhance clarity. After 48 hours, they must be transferred to stainless steel tanks where alcoholic fermentation took place at a controlled temperature that did not exceed 15 C (59 F). The wine was aged in temperature-controlled stainless-steel tanks at 10 C (50 F) to preserve aromatic components up until bottling.
