About Chateau Les Justices
It is exactly in the heart of the French commune of Preignac, in the Sauternes, that the more than eight hectares of vineyards belonging to the Ch teau Les Justices meet. Julie M deville - soul of the small Ch teau Gilette, as well as belonging to that family that in France is nicknamed as the 'Antiquaire du Sauternes' - and Xavier Gonet - successful winemaker from a family of winemakers originally from Mesnil sur Oger - are the names that at the moment they stand behind the Ch teau Les Justices. Names, precisely those of Julie and Xavier, who in addition to forming a fixed couple in love life - the two are in fact wife and husband - also identify all those labels that today are grouped under the Gonet-Medeville brand. Among these labels, we find the wines of Ch teau Les Justices, fruit of an exceptional terroir and children of a centuries-old savoir-faire. Among the rows, the varietal distribution sees the predominance of s millon with 85%, followed by sauvignon blanc with 10% and 5% of muscadelle. With vine plants that are attested on an average age of forty years, we get to harvest extremely valuable grapes, which harvested grain by grain, are brought to the cellar only when affected by the right degree of noble rot, to then be processed following meticulous and rigorous procedures. After the vinification, the aging is carried out in oak barrels, and lasts for two years, until bottling, which will be followed by the placing on the market. Respecting centuries of traditions and following ancient knowledge, it is in this way that the Sauternes of Ch teau Les Justices reach literally sensational levels of quality.
