About Castellare di Castellina

The 22 hectares of vineyards are located on the hills of a natural amphitheatre, facing south-east. On this magnificent domain, 160,000 bottles of wine are produced every year. At an average altitude of 370 meters above sea level, the vineyards are between 5 and 30 years old. Poderi Castellare di Castellina was born in 1968 from the coalescence of five farms. Excellent exposure to the sun, good water drainage, a mixed soil of calcareous marl ensures good quality wine production. I Sodi di San Niccol is proof that the local grape varieties can give a wine of the highest international standards, without the help of French or international grape varieties. After a rigorous selection during the harvest, the grapes are fermented in steel tanks at a controlled temperature. At the end of the malolactic fermentation, the wine is decanted into Allier, Troncais, Nevers, Limousin, and Vosges oak barrels, made by different coopers, for an elevation of 12-18 months, depending on the vintage. On the labels of Castellare, a different bird is reproduced every year, chosen from among those in danger of extinction, this can be associated with the care towards the environment that guides the company's production. In fact, the ban on hunting, together with this type of cultivation, the use of herbicides and pesticides, and any kind of systemic chemical product is largely eschewed.
