About Cascina degli Ulivi
At the young age of just 18, Stefano Bellotti took over the family farm, which is located on the border between Piedmont and Liguria, in Novi Ligure. Stefano began his journey with different crops and a small hectare of vines; moreover, thanks to the meeting with one of his first masters, Pietro Toccalino, a neighbour, he learns the basics of winemaking. Stefano's crucial choices radically characterize everything that Cascina Degli Ulivi represents today. His way of viticulture is partly forced by the morphology and physiognomy of the land, which, to say the least, is difficult to cultivate. But over the years Stefano realizes that he is not alone and begins to meet fellow connoisseurs who think like him, first teachers and then fellow travelers, including Alfredo Roagna, Luigi Brezza, and Jean -Pierre Frick. Its wines, all from spontaneous fermentation, without the addition of sulphur dioxide and outside the DOC, have restored value and dignity to the Cortese grape and are among the few capable of describing a territory marred by legislation, enology, and the market, which today produces wines devoid of any depth. Cascina degli Ulivi, is more than just a plantation since Stefano's daughter took over. Today, Stefano dreams has taken the shape of an Agrotourismo with the help of the vineyard, arable fields, woods, orchards, a vegetable garden, and ranch.
