About Nicolas Joly

'Coul e de Serrant is a remarkable estate and is one of only three single estate appellations within France today (the other two being Roman e Conti and Ch teau-Grillet). Its sheltered, southwest-facing vineyard is an ancient monastic vineyard and is located within the boundaries of the Savenni res Appellation. The seven hectares of vines have been farmed on biodynamic lines since 1982 and owner Nicolas Joly is one of the most passionate advocates of this controversial approach to viticulture. This wine is fermented and matured in wood and is bottled after a very light and delicate filtration. This is one of the greatest dry white wines in France - it needs at least five years bottle age and wines from the best vintages will last and last.' In 1980, at the time of the technological revolution in the wineries, in which irrigation systems, new materials and machines were incorporated that facilitated work, Joly once again bet on the vineyard and made a minimum intervention in the winery. He understands the winery as a maternity ward rather than a factory. Its three great wines are Coul e de Serrant, Clos de la Vieux Clos and this Clos de la Bergerie, 100% Chenin Blanc from vines of approximately 25 years with a production of 25/30 hl/ha, it is made in wood and only 5% represents new wood. On the nose, it is very complex with very ripe white fruits, dried quinces and mineral notes.
