Ulysse Collin winery

Ulysse Collin is a Champagne producer based in the village of Congy in the Côteaux du Petit Morin, a lesser-known area within the Champagne region. The estate is led by Olivier Collin, who took over the family vineyards in 2003 and has since established a reputation for producing terroir-driven, single-parcel Champagnes that are highly sought after by enthusiasts and collectors.

Olivier Collin’s approach is rooted in a deep respect for the land and a philosophy that emphasizes expressing the unique character of each vineyard. The estate works with approximately 8.7 hectares of vines, primarily planted to Chardonnay and Pinot Noir. The vineyards are divided into distinct parcels, each with its own identity and microclimate. The soils in this part of Champagne are rich in clay and chalk, contributing to the wines' distinctive minerality and complexity.

Viticulture at Ulysse Collin follows sustainable and organic principles, with a strong emphasis on working the soil and encouraging biodiversity. The vineyards are farmed with minimal intervention, avoiding herbicides and pesticides, and focusing on the health and balance of the vines. Olivier Collin believes that careful vineyard management is essential for producing wines that truly reflect their origin.

In the cellar, the winemaking process is guided by a commitment to expressing the nuances of each parcel. Fermentation takes place in oak barrels, and the wines undergo long aging on lees, which adds texture and complexity. The wines are typically bottled with low or no dosage, allowing the purity and precision of the fruit and terroir to shine through. Each cuvée is made from a single vineyard or parcel, and is released as a vintage wine, highlighting the specific conditions of each year.

The range of Champagnes from Ulysse Collin includes several notable cuvées, each named after the vineyard from which it originates. Among these are Les Pierrières, a Chardonnay from a stony, chalky parcel; Les Roises, another Chardonnay from a richer, clay-limestone site; Les Maillons, a Pinot Noir from a parcel with distinctive red clay soils; and Les Enfers, a Chardonnay from a parcel with deep clay. Each wine is crafted to express the singular characteristics of its site, offering a unique perspective on the diversity of the Côteaux du Petit Morin.

Ulysse Collin’s Champagnes are known for their depth, precision, and ability to age gracefully. The wines are marked by vibrant acidity, layered fruit, and a pronounced mineral character. They are produced in limited quantities and are highly allocated, reflecting the estate’s commitment to quality over quantity.

Olivier Collin’s vision for Ulysse Collin is one of continuous exploration and refinement, seeking to push the boundaries of what is possible in Champagne. Through meticulous vineyard work, thoughtful winemaking, and a dedication to authenticity, Ulysse Collin has become a benchmark for single-parcel, grower Champagne, offering wines that are both expressive and singular in their identity.
