Moulin de Gassac winery
The Moulin de Gassac wines were created in the early 90s by our father and the founder of Mas de Daumas Gassac, Aim Guibert. The Moulin de Gassac Selection is produced from the finest plots of a unique Languedoc terroir. The clay-limestone soil (rich in bauxite and therefore in iron) is dry and well-drained. The terroir enables the grapes to reach full maturity, with a superb concentration of flavors and a naturally reduced yield. The plots for the white and ros wines are selected from the area around the Thau Lagoon, near the village of Pinet. The soil is clay-alluvium with a small number of pebbles. This high-quality terroir benefits from the influence of the Mediterranean. Most of the vineyard consists of the king , Cabernet Sauvignon. In 1972, 17,500 uncloned Cabernet Sauvignon vines were thus grafted onto American rootstock. These in themselves constitute a unique museum of old vines planted in the M doc before the age of cloning. Besides, 20% of the vineyard is planted with other noble varieties that are blended with the Cabernet Sauvignon: Cabernet Franc, Malbec, Merlot, Tannat, Petit Verdot, Carmen re, Syrah, Pinot Noir and ten other rare, old varieties. Note that while these four varieties account for 90% of the white wine, the remaining 10% comes from fourteen glorious, rare varieties. For example, Neherleschol, an Israeli grape variety grown on the Golan Heights, would have been the source of the biblical wine in the miracle of the Wedding at Cana
