'The secret to distilling a great Grappa is simple: you just need fresh pomace and a hundred years of experience!' When Jacopo Polis great-grandfather GioBatta founded the traditional distillery around 120 years ago out of a great passion for grappa, he was still traveling from village to village with a mobile still mounted on a handcart in order to freshly process the marc of pressed grapes for small winegrowers in black. Decades later, Jacopo's grandfather Giovanni installed a distillation unit from the converted steam engine of a locomotive. Father Toni finally constructed an arrangement of twelve copper boilers in 1956, which is still in use. Today, the company from Schiavon near Bassano del Grappe stands for the modern use of the very old distillation flask made of discontinuous cycle steam boilers. The internationally renowned Venetian company is run with heart and soul by its four siblings Jacopo - the precise thinking head of the distillery - as well as Giampaolo, Barbara and Andrea. The grappa is obtained from absolutely fresh and healthy pressed grapes of excellent quality, produced by the best wine producers from a strip of mountains stretching from the company headquarters to the hills of Marostica and Breganze. In addition to fine pomace and fruit brandies, for example, he also has a Gin in his range, which consists of three product lines.
