Domaine Simon Bize winery
The Domaine Simon Bize et Fils is located in Savigny-Les-Beaune in Burgundy. The estate's history begins in 1880 with Simon Bize, who embarked on viticulture with a few acres of vines in the midst of the phylloxera crisis. The Simon Bize estate then passed to his son, who is also called Simon, in 1918, who increased his area, then to the latter's son (another Simon), in 1950. Until then, the estate's wines were not sold on their own but entrusted to the merchant. From 1950, the domain began to take off by building up a portfolio of private customers, wine merchants, and restaurateurs. But it was Patrick Bize, who from 1972 brought the quality of his wines to the top. The goal is to make exceptional wines with great saving potential. The wines are not straightforward and easily accessible as young people, but they have elegance, class, personality, life and the domain must be considered among the very big ones in Burgundy. The fields have been cultivated biodynamically since 2008 and emphasis is placed on low yields and fruit with the best possible balance between ripeness and acidity. The red wines are vinified without stalking or with partial stalking. This practice dates back to 1947 when Patrick's grandfather had to partially discard the vintage due to heat during the fermentation and they had to pick up large blocks of ice in Beaune by horse-drawn carriage, to keep the temperature down. The stems help to regulate the temperature, but they also help to give the wines more structure.
