Their Savagnin is vinified both as a classic, topped-up white and as Vin Jaune, matured under a veil of yeast for over six years to develop deep, nutty flavors. Chardonnay from the estate expresses the limestone-rich soils, offering a balance of richness and tension. Vin Jaune, made exclusively from Savagnin, is aged in barrels without topping up, allowing a layer of flor yeast to form and impart complex flavors of walnut, spice, and dried fruit. Vin de Paille, or “straw wine,” is produced from grapes dried on straw mats before pressing, resulting in a sweet, concentrated wine with notes of honey and candied citrus.
