Domaine Dominique Gallois winery
On the C te de Nuits, Dominique Gallois grows the vines of the family domain that exists in Gevrey-Chambertin since 1901. Here, between Dijon and Beaune and amongst the most prestigious crus of Burgundy, our wines flourish in the heart of the Climats de Bourgogne, classified in July 2015 in Unesco World Heritage. The domain extends over 4 hectares (10 acres) where our 7 appellations or climates flourish: 0.50 hectare of Bourgogne Chardonnay, Pinot Noir, 2.2 hectares of Gevrey-Chambertin Village, 1 hectare dedicated to Gevrey-Chambertin Premier Cru wines: Combe aux Moines, Petits Cazetiers, Goulots, and another 0.30 hectare of Grand Cru Charmes Chambertin. Pinot Noir is a grape variety of remarkable finesse, very elegant and with great freshness. Pinot Noir translates the subtle nuances of our terroir, expressing all its originality and singularity. It is at the origin of the Great Red Wines of the C te d Or. The C te de Nuits is where Pinot Noir expresses the best of its potential. And Gevrey-Chambertin is precisely the terroir of choice and excellence for Pinot Noir. This mysterious and complex grape variety interprets remarkably the subtlety of our climates. It is of ruby colour, with a wide aromatic range. Pinot Noir is equally a fragile and capricious variety that needs to be carefully looked after. In the cellar, the process begins by rigorously sorting the hand-harvested fruit, and after a cold soak of 2-5 days, the fruit is fermented using native yeasts. Elevation takes place between 18-24 months in oak casks.
