From a bland and impersonal building facing the Hermitage Mountain, G rard and Jean-Louis Chave (father and son, respectively), produce some of the best wines in the world; with astonishing humility they give you to taste their Hermitage Tinto y Blanco, without a doubt the highest exponents in each of their categories of Hermitage wines. Its wines have few secrets; First of all, low yields, wait until the physiological maturity of the grapes, and let the wine make in the most natural way. Nothing to process or filter the wine. Each plot is vinified and raised separately; the wine being finally assembled from scratch each year. The Chaves are expert assemblers and tasters, and their 'cuv es' are different each year, proceeding to sell the items they do not like to participate in the final wine each year. The white is composed of 85% marsanne, and 15% roussane. It is a wine that needs 10 to 15 years to reach its best. You also need time in the bottle to show the best of yourself. One of the wines that have left one of the best memories in my mind (best place to keep great wines, by the way), was a 1990 Chave red. Hermitage Rouge, Hermitage Blanc, Ermitage Cuv e Cathelin, Saint-Joseph
