About Dominio do Bibei
Dominio do Bibei is a pioneering winery located in the Ribeira Sacra region of Galicia, northwest Spain. Founded in the early 2000s, the estate is the vision of Javier Domínguez, who sought to revive the ancient winemaking traditions of this dramatic, terraced landscape. The vineyards, set on steep slopes at altitudes ranging from 300 to 700 meters, are planted primarily with indigenous grape varieties such as Mencía, Brancellao, Mouratón, Sousón, Godello, Albariño, and Dona Branca. The estate covers approximately 125 hectares, of which around 35 are under vine, with the remainder left to natural forest, reflecting a deep commitment to biodiversity and environmental stewardship.
Dominio do Bibei’s philosophy centers on minimal intervention, both in the vineyard and the cellar. The vineyards are farmed organically, with an increasing emphasis on biodynamic principles, to preserve the unique character of the soils and microclimates. The region’s granitic and slate soils, combined with Atlantic influences and a continental climate, create wines marked by freshness, elegance, and complexity. Harvesting is done by hand, often in small boxes, to ensure the health and integrity of the fruit. In the cellar, gravity flow is used to minimize handling, and fermentation takes place in a mix of concrete, large oak foudres, and small barrels, allowing each parcel and variety to express itself fully.
The estate produces a focused range of wines, both red and white, that have garnered acclaim for their purity and sense of place. Among the most celebrated are ‘Lalama’, a red blend dominated by Mencía, and ‘Lalume’, a white wine based on Godello. Each bottling is crafted to reflect the nuances of its origin, with careful blending and aging to achieve balance and depth. The use of large, neutral oak vessels and extended lees contact is favored over overt new oak, resulting in wines that are textured yet restrained, with a clear mineral backbone.
