About Nikolaihof
Taking into account that Nikolaihof is one of the oldest wineries in Austria as well as being one of the first to adhere to the principles of biodynamic agriculture. To this, we must add that it is located in the Wachau Valley on the banks of the kilometer-long Danube. Here the climate is continental and is characterized by long, dry summers and short, cold winters. The Wachau Valley is planted mostly with Riesling and Gr ner Veltliner and its terraces have millenary terraces that resignedly support the vineyards. The Wachau has a pioneering classification in which there are strict limits on the alcohol content of each wine and where the wines can never have tangible excesses of wood as a result of aging. The lightest is known as Steinfeder, followed by the Ferspiel and finally the strongest, the Smargard. This classification is strongly linked to the vineyard since the parameters that reflect each of these classifications have a lot to do with the orientation (which side of the river the vineyard is on) and the composition of the soils. The Nikolaihof vineyards were always in the hands of the monks until in 1894 it passed into the hands of the Saahs family. Since 1971 the Saahs have worked their 22 hectares following the principles of biodynamic agriculture and since 1998 they have been certified by Demeter. The average age of the vineyard is 50 years.
