Inspired by visits to Burgundy, Altare became convinced that Piemonte’s Nebbiolo grape could yield wines of greater finesse, elegance, and drinkability if approached with new techniques. Despite resistance from the local community and even his own family, he began to experiment with shorter macerations, green harvesting, and the use of small French oak barriques, rather than the traditional large Slavonian casks.

These changes were radical for the time and sparked controversy, but Altare was steadfast in his vision. His approach produced Barolos with softer tannins, deeper color, and more pronounced fruit, making them accessible at a younger age without sacrificing aging potential. This style contrasted sharply with the robust, austere wines that required decades to mature.
