Despite resistance from the local community and even his own family, he began to experiment with shorter macerations, green harvesting, and the use of small French oak barriques, rather than the traditional large Slavonian casks.

These changes were radical for the time and sparked controversy, but Altare was steadfast in his vision. His approach produced Barolos with softer tannins, deeper color, and more pronounced fruit, making them accessible at a younger age without sacrificing aging potential.
